Banana Peanut Butter Oat Balls

So this all started with me wanting to make breakfast cookies. I researched all sorts of things I could put into them and I envisioned some seedy, nut filled concoction. I never followed through and tried to make any. They seemed like to much work.


But I still needed a healthy snack. Something easy that the kids could munch on after school or add to breakfast when cereal wasn't enough. And it had to be easy to make a lot of them quickly, no crazy complex thing that required a trip to Bulk Barn. So this is what I ended up with.


Bananas. Peanut butter. Oats. Chocolate Chips.


Just 4 ingredients that I almost always had on hand. I usually have too many bananas around so this will use them up more often. Less banana waste is never a bad thing. These are not too sweet but they really grew on my son. He didn't like them at first but he has eaten most of them. This recipe makes about 50 oat balls.




What You Need:

4 Bananas

1 cup peanut butter

4 cups Quick Oats

1/3 cup Vegan Chocolate Chips (semi sweet mini chips in this case)


What To Do:

  1. Preheat the oven to 350 degrees

  2. In a large bowl, mash your peeled bananas.

  3. Mix in 1 cup of peanut butter

  4. Mix in oats 1 cup at a time

  5. Mix in chocolate chips

  6. Using a cookie baller (or meat baller) form your oat dough into balls, placing them on a cookie sheet. They can be pretty close together as they do not change size or shape when baking. Bake for 15 minutes

  7. Transfer balls to a cooling rack to cool. Store in an airtight container when cool.
