I don't have much to say about these cookies. They are real easy to make. They are one of my husbands favorite cookies and I also like them. My son is not a fan so we get them all to ourselves. I doubled the recipe in the pictures below because that way there were more cookies to eat.
What You Need:
2 cups flour
1 cup of all vegetable shortening
1/2 cup confectioners sugar
1/4 tsp salt
1/4 tsp baking powder
1 tsp vanilla extract
1/2 cup vegan semi-sweet chocolate chips
a few spoonfuls of regular sugar
What To Do:
Preheat the oven to 350 degrees F.
Add the first 6 ingredients to a bowl and mix with a mixer or by hand. Obviously using a mixer is easier than by hand but if you are not using a mixer I recommend cutting the shortening in with a knife before mixing. It's much easier that way.
Add the chocolate chips and mix those in. Probably best to do that by hand so you don't break up the chocolate chips.
Pour your very crumbly mixture into a brownie pan and make it even. Then press it all down firmly with a flat spatula.
Sprinkle some sugar evenly over the top and pop the pan into the oven.
Bake for 30-35 minutes. I like to cut it into squares while it is still warm... then eat them also when they are still warm.
